Hello!
I would like to offer my help to make nuxt image v1 work with vercel as I have just hacked in support for that in a project of mine.
From what I can see the only thing breaking it is the path of the config here https://github.com/nuxt/image/blob/v1/src/provider.ts#L39.
Do you need help in fixing that or are you already on that?
